Recipe: Mini Lasagne Cups

When I'm short on time, my inspiration in the kitchen wanes. I generally turn to Pinterest for new ideas but overlook anything that requires more than 2 star effort. I discovered Damn Delicious' Mini Lasagne Cups recipe and was instantly sold. Thought I would share the recipe because it's always good to know someone else has tried a Pinterest recipe and not failed. Not convinced? Here's the finished product first up!


This recipe conveniently creates individual servings and is perfect for a quick kids dinner or party favour. And in Damn Delicious' words, "miniature food always tastes better, right?"

Ingredients:

1 tablespoon olive oil
500 grams of mince or 2 Italian sausage links, casing removed (Damn delicious used sausage I opted for mince).
Marinara sauce, homemade or store-bought (I lazily used store-bought)
1 1/2 cups ricotta cheese
Salt and ground black pepper to taste
24 2-inch wonton wrappers
1 1/2 cups shredded mozzarella cheese 
Parsley leaves

Method:

  1. Preheat oven to 190 degrees. Lightly oil 12-cup standard muffin tin or coat with nonstick spray.
  2. Heat oil in frypan, add mince until brown, about 3-5 minutes, making sure to cook through; drain excess fat and stir in marinara sauce.
  3. Season ricotta cheese with salt and pepper, to taste; set aside.
  4. Fit wonton wrappers into each of the 12 muffin tins, pressing carefully to make sure there is an opening in the centre. 
  5. Fill each cup with 1 tablespoon ricotta cheese, 1 tablespoon of marina mix and 1 tablespoon of mozzarella. Then repeat with one more layer.
  6. Place into the oven and bake for 10-12 minutes, or until cheese has melted and the wonton wrappers are golden brown. 
  7. Serve immediately and garish with parsley.

Leisa's Mum on the Run Style

Ladies! Kids have now been back to school for two weeks...and I don't know about you but I'm only just finding my rhythm. If any of you are like me, or all of us at BB, it's scramble scramble, scramble everyday - 3 school drop offs, lunches, swim bags, cricket bags, ribbons, socks, hair and teeth and that's ALL before 7am...Quite frankly, I'm lucky to have matching shoes on at this point!
I know this story will relate with so many of you...trying to get our kids into new routines but also finding new routines for us mums. Last week in store, we realised that SO many mums are coming in and are needing comfy, but perfect, drop off gear!

I clearly remember when my eldest started prep, I was pregnant with my third. It was REALLY hard for me to make the right choices in drop off gear. I needed ANYTHING black that would slim my SUPER-SIZED frame down. Unfortunately for me the one thing I wasn't ready for was how fresh, comfy, co-ordinated AND stylish these mums were. Another troubling thing was, these mums never seem to wear the same stylish outfit again the next day. No, the next day they would be in something amazing, and the day after that. These mums had style that I was craving for! Now it wasn't just drop off clothes I was needing, it was mum get-together dinner outfits, sports day clothes that were house co-ordinated, assembly gear, friday lunch dates and the list goes on. AND that's just for primary school...wait until they hit high school...New mums, new teachers, new community and the same problems BUT at least I'm not pregnant this time! 

This post is dedicated to our Mum on the Run problems, we've thrown together stylish, comfortable and functional outfits that will slim and satisfy your 'stylish mum' needs.

1. Casual in Black: Shop Now

The perfect LBD. Great to dress up, or dress down. It ties in around your waist so you can wear it cinched, or softly cinched, depending how much you want to play up your waistline. Definitely flattering on the figure, and perfect for the sports carnival teamed with accessories in your house colours for fun! Could definitely take you to dinner, with a wedge, for a mum's night too!

2. Orange Dreams: Shop Now

This outfit is perfect for parent info nights...you've got first impressions to make but you don't want to look like you've gone to all that effort! But you know, you've still got to look good! This shape is a blank canvas and great to easily add accessories. This style is also available in navy and black (coming soon) if rust isn't your thing!

3. Leopard Daydream: Shop Now

Great dress for drop off, especially on a hot day! This style can easily take you to lunch. Wear with a little sandal and team with cute earrings and/or a bold colour bag. The straps are adjustable so it's easy to adjust for different bust sizes and shoulder widths. We also can't complain when the maxi is on sale for $49!

4. Chambray & Lime: Shop Now

This is your sports on Saturday ensemble! Wear with a little canvas lace-up, but, perhaps ditch the necklace for a funky hat. However, if you're thinking this look for lunch with friends a necklaces adds a bit of fun and confidence to your look!

5. Paris Red: Shop Now

Great dress teamed with denim is a no brainer. So wearable and versatile. The tote is big enough for everyday essentials but is certainly not big enough for sports day! This look starts us thinking about Autumn style. Don't be afraid of the high neck if you have big boobs it IS flattering and we love it!
